Yeah, I didn't pay too close attention  They do have VGA (ha!) and you could run a USB monitor :\
Often times, VGA on enterprise boards are supplied with an ASMedia chip or even a Matrox G200 and only support basic output. If the board doesn't have a digital connector and specifically mentions Iris support, I'd be sure to check what is supported by the output(s).

Should be able to do that with plenty of headroom. 6700T and 970 mini with a drive should live around 210-220 I believe. An additional SSD or M.2 should only consume a few watts. Also the 250W HDPlex can produce up to 400W given ample access to fresh/cool air.

Yeah, there is almost no reason (besides cost) to go with the 6700 for S4 Mini purposes...go with the T if you can. The K is a good choice just because you can keep it undervolted in the S4 Mini...and should you ever upgrade (or change cases) you could overclock it.

@Josh | NFC question on the PicoPSU - I just ordered a 160XT+192w adapter kit this morning; what are the default connectors (type and count) that come with the unit? I've been trying to find videos and reviews but it looks like I'll have to use a molex to PCI-e adapter?

GREAT question! That's another video idea. You will need a 4-pin to 6-pin adapter.

With the PICO 160XT you get the following in the box:

1. Pico 160XT with direct attached power wires that end in 4 PCIe pin male
2. Removable CPU 4-pin harness
3. Removable harness with one SATA power connector, and one, 4-pin female molex.
4. PCIe 4 pin to DC 4 pin mount adapter (shown below)
5. Two ity-bity screws for mounting DC 4 pin mount.

quick question, on the S4 mini build, is it recommended to install the motherboard IO backplate or complete the install without due to heat?

Hey Josh, would the Zotac GTX 1060 AMP fit in the S4 mini? Tom's hardware are reporting it as 8.27" long? It's rated at 120W, but we'll have to wait for reviews to see.

I'm interested in that or the RX480.

And how about one of those and an i7-6700 on the HDplex power supply, would that combination work OK?

Cheers!

Wouldn't you consider the Zotac 1060 mini instead?

Your selection is fine for the HDplex, Josh runs a 960 on his PicoPSU and others here have been using 970 mini.

I would, but I don't like the idea of the solid heatsink. I much prefer the heat pipes and the size of the AMP and at 8.27" maybe it just will fit!
