How much maximum watts you manage to hit staying in a quiet and cool config ? 100w ? 120 w ?

It is hard to say exactly. The result will depend heavily on load and tasks that you plan to use. It will be much easier after conducting a tests, but for today we don't have such opportunity.
I recommend to search for builds with Noctua NH-L9 and see how it performs on different CPU(not just Noctua table).
With case fans CPU temperature will be more stable and predictable during different loads, thus allowing a slight curve to be specified for CPU fan.

Hello, we are doing our best to release our product. We have struggled to find good metal manufacturer in our country because of complexity of case and War that is going on. For today we have found good metal production partner and polishing results and approving coating, now version 3 sample case is in production expected to be ready next week after which we will launch batch in production that has to be ready in two weeks.

P.S. : Gemcase C8 APU is in final stage of development.
