A potentially dumb question I know, but I don't trust PSU calculators as they seem to be stupidly conservative.

I have a BeQuiet 300W SFX PSU, and am running an Asus B250M Plus board with i5 6500 and 2x M.2 drives at the moment.

I bought a used Sapphire Pulse RX 570 ITX earlier, and am hoping that the 300W PSU will be OK with it...

I don't intend to add anything else other than a 2.5 HDD in the foreseeable future

You should be fine tbh. I draw 300 ish with a 3600 and 2070s on average while gaming. Only reason to go over 300w is if you do bclk oc on cpu while oc'ing the gpu.

TLDR; < 160w during gaming, < 200w during stress test.

Thanks guys, I thought it should be OK ?

I have no plans to OC this kit as it's going to be in a pretty tight case with not much space for large CPU coolers

It's just I've been on Nvidia for a while, and they seem to be less power hungry than AMD as a rule this last few generations.

OK, roll on the RX 570 ITX delivery, my first AMD card since my HD 5750!
