I am planning on a NCase M1 build with the Asus B550i, EVGA XC3 3070 (or 3080), SF750 and an air cooled (NH-C14S) ryzen 5000 CPU. I am only debating which processor to use, I was planning to go with a 5800x, however it has been reported that the 5800x can run hot, hotter even than the 5900x. Does anyone have experience with which runs hotter, esp. in ssf cases? And would the NH-C14S be enough to cool the 5800x or 5900x in the NCase M1? If needed I can always step down to the 5600x which should definitely run cooler.

Optimum Tech just put out a video on that subject. Different case but good info on air cooling Ryzen 5000 series in SFF. Hope this helps.

Yes I saw the video, very appropriate timing. However he is running a beast of a CPU with a smaller cooler I am planning and in a smaller case. He did run in some, although minor, thermal issues I like to avoid. The 5900x should be cooler than the 5950x and the NCase M1 should provide better cooling, however I am not sure by which margin. I will try to dig deeper into the thermal performance of the 5800x vs the 5900x and make a choice based on that. I might just go with the 5800x.

You basically already mentioned all the info you need. Now just get the best cooler available and add the processor you need. Don't stress out on thermal performance information of each processor type since you don't know how your specific cpu will behave. It will work out well. 😉

C14S will work.

An alternative is the Thermalright silver arrow 130. Be careful though, it’s very sharp. I have one on my 8086K in an NCASE M1. Make sure to install the 92mm exhaust fan if you use it
