Mates,
I was hoping for some advice, suggestions on my 1st ITX build.

- Usage
1 platform PC for PUBG + Streaming. (streaming is just a hobby)
CPU/GPU: Prob not OC
Ram: OC

- The Line-up

CPU: AMD Ryzen 2700X
Motherboard: ASUS ROG Strix X470-I

Memory: ***2***
G.Skill Trident Z RGB DDR4-3200 14-14-14-34 (F4-3200C14D-16GTZRX)
or G.Skill Flare X DDR4-3200 14-14-14-34 (F4-3200C14D-16GFX)
or suggestion of your choice (over 3200mhz, samsung b-die based)
Storage: Samsung - 860 Evo 1TB 2.5" SSD
PSU:***3***
CPU Cooler: ***4*** (up to 65mm in height)
Case Fan:***5*** (15~25mm in height) (2 case fans mounted on top with M top-hat, 1 fan under PSU)
Case: Louqe Ghost S1 (ITX)

*I need advise on ***#*** (5 areas).
But suggestions on any other areas and/or just on anything in general would be really helpful.

The have tested most of the best / easiest to get coolers for CPU. You can see in their PDF what they recommend. You can go liquid or air both works great.
You can also read what GPU will fit. So basically you just deside your budget and performance you need. Quite straight forward.
You will need to use a sfx powersupply. you can just Google best sfx Power supply and their is a handful of good ones.
You are going with the Ł top hat ?
I would probalyponly use that for a AIO water cooling for the CPU. Buy sure some fans won't hurt.

would G.Skill Trident Z 3600 MHz CL15 (F4-3600C15D-16GTZ ) be compatible with x470-I?

Depends on what cooler you get. With air-cooler you probably need low profile ram. If you have water cooling you can probably use the ram you talked about
