So what would you like to do? Just stock case brickless, a dGPU build (maybe even in the stock case), custom enclosure such as desknano

Looking at the Lander 55.

I want to use the A/E M2 key to connect a 2.5GBE RJ45 (Intel chipset)
Maybe Sacrifice a m2 2280 slot aswell for Dual RJ45 (m2 to pci, and then find/create a place for the PCIe NIC)

Allow for better cooling. Stuff like that and other cool ideas.

Since it wont be used as a gaming PC no need for dGPUs

It already has 2,5Gb and isn't really suited for a NAS/server type build. What do you want extra ethernet for?
As for cooling suggest an IS55 / X53 and a tiny exhaust fan in the rear.
I'm not sure what you mean by "other cool ideas". You could add RGB

This is a custom cnc'd aluminium case for the deskmini x300/x600:




And it has better ventilation:



I am thinking of putting in a 7950x with an axp-100 copper + noctua slim 120 mm, and trying to get the most out of it after increasing the power limit and making this 12v mod on the x600.

The only issue is that within the case there is a massive plate raising the motherboard up (to slide 2.5 drives underneath). I think this can be removed and another fixture put in which would increase the headroom enough to allow for the above cooler with some + some space to avoid turbulance:
