Can the mini 160 and an internal 160W AC adapter realistically power a 8700K + Quadro P4000? The max power draw can theoretically get up to 130W + 105W...

I'd say no - including the board, drives, etc, you're past the overcurrent protection at load :/

Yeah, I think you're a fair bit overbudget there. If you went to an 8700 non-K you'd probably be at the upper limit of the system (65W + 105W) and could probably gain some headroom with undervolting. I still wouldn't recommend this combo with the 160W AC-DC unit. If you wanted to get a beefier AC-DC solution you could do the 8700 Non-K and P4000 I reckon.
