Will 2 PCIe cards fit?

I see that the M1 has 3 PCIe slots, so does this mean I can fit a graphics card, and sound or wifi card as well? To connect it I could use an M.2 to PCIe cable if so.

In theory you can, but routing the cable will be difficult (maybe impossible). You could also look at the smaller 2/3 slot mATX boards.
