I am currently looking at doing a 2 M.2 System to lessen cable clutter inside either the SV590 or SM580.

What size M.2 Should I get for My OS? I do not save video, photo or music on my PC and only real programs are Discord and Anti Virus and maybe some other small programs and all the software for my hardware.

What size M.2 for steam? I mostly play DCS World a flight simulator if anyone knows and some other games is 2TB enough

I use 2x512. It depends on how many games you are going to have installed at any given time. I rarely play more then 3-4 titles at the same time, so for me it's plenty. I currently sit on 600gb free space.
That said, storage is cheap now so you can prob go 1tb without paying too much.

Did you see this dreamy Sliger SM580 build - ft. 3900X & Sapphire Nitro+ 5700 XT?

Looks like he used Gen 4 NVMe (Sabrent 1TB Rocket NVMe 4.0 Gen4 PCIe) in the top-motherboard-slot and a Gen 3 NVMe (HP EX950 M.2 2TB PCIe 3.1 x4 NVMe) in the bottom-motherboard-slot. I am not sure why you would want to use Gen4 in one slot and the older technology Gen 3 in the other slot? I believe the motherboard supports Gen 4 in both slots because it claims (Dual Ultra-Fast NVMe PCIe 4.0/3.0 x4 M.2).

Gen 4 runs hotter than Gen 3. Maybe that's why?
