You can use three monitors with this motherboard by utilizing all three display outputs: DisplayPort 1.2, HDMI 2.0, and Thunderbolt 3. You will need an adapter, such as this one, for the ThunderBolt 3 port if you do not have a monitor that is compatible with this output

That depends on whether you decide to use the integrated graphics or a dedicated GPU.

The 2700X may be a little toasty with the C1. I'd opt for the AiO in this scenario.

Based on some quick searches, I found the GIGABYTE 1080 Mini has a height of about 130mm. Now, sure, these are tight tolerances, but it is doable.

There needs to be a third rear bracket type without the PSU cutout. Shift the m-ITX cutout to the far left and use the added space to put in two sideways slots for a full size GPU. Throw in a riser card, too, I guess. Besides that, it's looking more than solid.

100% this. They can only test so many DIMMs. Since they all come from the same few OEMs, an issue should not be prevalent.
