EK sells their supremacy plates a la carte as well if you need a spare these plates have jogs in the outer edge that might limit your cutting surface though. Velocity plates would probably work the best if you can get your hands on one

I had a long rebuttal typed up but I didn't want to be mistaken for losing my cool since this is something I'm passionate about. I'll just say that I recommend doing some more research and maybe take a shot at building one yourself.
