Any word on ASRock's attempts to lower the price of MXM cards?

, if you decide to sell it all you wont lose as much money as paying 500 on a 1060 if it goes back do 240
You also have a very substantially smaller market to sell it into right now though. Hocking a PCIe card is a relatively easy ask as compared to unloading its MXM variant

Adapter cards do exist, nfi how easy they are to source or how well they work, etc

Also, you need a cooling solution for the MXM card, where as pretty much any ordinary GPU will come with a cooler.
