If serveral CPUs are using the same socket (let's say LGA1151), will they all have the same thickness/height?
For example, i7 8700k, i7 7700, i5 8600k and i5 7600k, are they all the same thickness?

They should all have the same thickness so that the cooling solutions make enough, but not too much contact pressure on the IHS.

Each socket generation will match - it's required as per the specs. However, manufacturing tolerances exist, hence why the best coolers have some form of spring (be it a coil or spring steel mounting) to accommodate for variances.

Variances on CPU height are so small they're insignificant. On smaller coolers you just mount the cooler without any fancy mechanism.

Tension springs and screws are for ensuring that correct amount of force is applied so that the board or CPU aren't stressed. You want just enough force to the secure the cooler.
