If you can live with the single m.2 slot and the lack of ax-WiFi, the asrock b550-itx/ac is definitely the best price/performance board you can get. It’ll also be reasonably future proof (in case you get a new cpu) and as you mentioned, you can replace the WiFi with an Intel 200 or 210.

I recommend using a virtual machine the next time. You can use the free virtualbox software + a free Windows VM from developer.microsoft.com for this. This way the software is completely sandboxed and your regular operating system/data is not at risk.
