They both cost about the same when you build them up.
The NUC is 10% behind the 1060 and maxes out at essentially a 6700. But is much smaller. Neither have good upgrade-ability. Haven't seen it on the retail channels... so maybe the last one didn't do well enough to get ordered.
The Deskmini arguably has better upgradability - More slots, and socketed processor and MXM for possible (but pricey) upgrades down the road. But the Hades Canyon is certainly smaller.

It's not an easy comparison the NUC theorethically has superior upgradability (thunderbolt 3 egpu ) and it has more ports , though the deskmini would let one insert a hexa core i7 in there which could arguably blow the NUC out of the water , but I'm not sure about how well such a cpu would be cooled (iirc 8700 throttles with the box cooler).The NUCs vega m is definitely weaker than a 1060 in games , but I'm not sure about the thermals on it , ultimately I'd say the deskmini is superior , but it will likely be way louder (and lacks a cool skull ).
External upgrade options hardly count Your processor and primary graphics are soldered in. The NUC is also a custom CPU with a non-standard cooler, on top of it's uneven dies. The DeskMini is all pretty standard.... But I do like the NUC, myself.
